Stone Fruit Peach Pie

PEACHIEST PEACH PIE

 

Ingredients

Peach Butter                            See Below

16 oz jar                            Peach Preserves or Jam

1 pkg 8 oz.                            Cream Cheese

1 container                            Cool Whip

1 tsp                                          Vanilla

1 ea                                          9” Pie Shell

Lots of                                           Peaches (about 2 cups of sliced)

Instructions

  • With a hand mixer, mix the Cream Cheese, Cool Whip and Vanilla until it is a smooth mixture.  Cover and place in the refrigerator.
  • In a small saucepan, combine the Peach Butter and Peach Preserves or Jam.  Heat slowly until it becomes like a thick syrup.  Keep warm.
  • Peel Peaches.  You can use the boiling water method and then immerse into ice water to easily remove the peel.
  • Slice Peaches into about 1/2” slices.  Place the sliced Peaches into a large bowl.  Have that bowl sit into a larger bowl filled with ice and water.
  • Take your pie shell (you can use your own, or a store bought.  You can use a regular flour pie shell or a graham cracker pie shell.) and spread the Cream Cheese mixture into the bottom.  Smooth it out.
  • Now, pour the warm syrup mixture over your Peaches and gently mix with your hands to thoroughly coat all of the Peach slices.  Allow the filling to cool slightly in your bowl.
  • Place one slice at a time into the pie shell.  You can place them any way you want, but do make it pretty.
  • When finished, cover and refrigerate to fully set.
  • Get out the Vanilla Ice Cream

 

PEACH BUTTER

Ingredients

1/2 cup               Peaches, cut up
1 TBS                            Orange juice
1 TBS                            Sugar
1/2 pound               Salted butter

Instructions

  • In a small saucepan, bring the peaches, orange juice and sugar to a boil. Turn down the heat and continue cooking until the peaches are tender and cooked down to a jam-like consistency. Let cool.
  • In a bowl, using a wooden spoon, blend the butter with the peaches, making a “compound” butter.
  • Chill in a ceramic pot till ready to use and soften slightly when serving.
