HERB FLAVORED VINEGARS
These are so fun. Anytime you need a vinegar for cooking or dressing, you can have your own specially made herb flavored vinegar. These are great as gifts as well. Simply use fine decorative jars.
Here’s how easy this is:
--Heat vinegar to approximately 160 degrees. Place 3 – 4 fresh herb sprigs in a sterilized glass bottle or jar. Pour warm vinegar into the bottle, cover tightly and let sit at room temperature for 2 weeks. Strain, discard herbs and pour vinegar into a sterilized glass bottle or jar. Add a sprig or two of fresh herbs (new ones). Fill bottle to the top and cover tightly. Store in a cool place.
HERB/VINEGAR COMBINATIONS:
Sage, parsley, shallots and white wine vinegar
Rose petals, violet petals and white wine vinegar
Dill, nasturtiums, garlic and cider vinegar
Chili Peppers, garlic, oregano and cider vinegar
Tarragon, garlic and white wine vinegar
Cilantro, garlic and rice wine vinegar
Dried red chilis and red wine vinegar
Garlic and cider vinegar or white wine vinegar
