PASTA WITH GREENS

Ingredients
1 bunch Swiss Chard or Collards or Salad Savoy
1 clove Garlic (minced)
¼ tsp Crushed Red Pepper Flakes
½ tsp Salt
4 TBS Olive Oil (extra virgin is best)
¼ cup Parmesan Cheese (freshly grated)
½ lb Pasta (any- you pick)
Instructions
- Be cooking your Pasta according to your package instructions
- Remove the center rib from the Greens. Stack the leaves and cut into ½” strips. Rinse them thoroughly. Shake dry; do not pat dry with a paper towel. The little water on the leaves will help “steam” the greens later.
- Warm the oil in a large, shallow sauce pan. Add the garlic and hot pepper. Saute until fragrant.
- Add greens (still wet from rinsing. This helps to “steam” a little)
- Cover and cook 4 – 5 minutes.
- Season to taste with salt.
- Toss the greens and pasta. Sprinkle with Parmesan Cheese.
NOTE: You could add some sliced Italian Sausage to this dish
