Goat Your Green Beans
Ingredients
3 lb Green Beans
½ lb Bacon
½ cup Shallots (chopped)
2 clove Garlic (chopped)
¼ cup Sherry Red Wine Vinegar
3 TBS Mustard
1 tsp Dry Mustard
½ cup Olive Oil
1 cup Goat Cheese
½ cup Dried Cranberries
to taste Salt & Pepper
Instructions
- Trim Green Beans. Cook in large pot of boiling water, salted, until just tender, about 5 minutes.
- Drain and rinse in cold water. Drain again. Pat dry. Transfer to large bowl.
- Cook bacon in large skillet until crisp. Remove bacon; pat excess oil, then crumble.
- Add Shallots and Garlic to the bacon dripping skillet. Sauté until just soft.
- Add Vinegar, mustard, dry mustard. Whisk with metal whisk, making sure to scrape up all the sticking bits on the skillet. Whisk in oil. Season with salt and pepper.
- Pour dressing onto beans and toss.
- Sprinkle the cheese, bacon and dried cranberries onto the beans.
