SPLENDID SPINACH RECIPES
SPINACH SUNSHINE SALAD
Ingredients
5 cups Spinach leaves, washed and dried well
1/2 Red Onion (thinly sliced)
1/2 Red Bell Pepper (thinly sliced)
1/2 Gold Bell Pepper (thinly sliced)
1 Cucumber (sliced)
2 Apples (Gala, Fuji, or your favorite)
2 Oranges (peeled, seeded if seeds, diced into bite-size pieces)
1/2 cup Vinaigrette Dressing (lite is great)
Instructions

Toss all ingredients together in a large bowl
·
Add dressing and toss again
·
Serve immediately
·
Makes 5 servings
SPINACH DIP
Ingredients
1 lb. Spinach leaves, washed
1 cup Low-fat Sour Cream or low-fat small-curd cottage cheese
1/2 cup Low-fat Yogurt
1/2 cup Parsley (finely chopped)
1/4 cup Green Onions (finely chopped)
to taste Salt & Pepper
Instructions

Boil or steam cleaned Spinach leaves, until wilted; drain and chop

In bowl, mix cooked Spinach, sour cream, yogurt, parsley, green onions,
salt and pepper
·
Cover and refrigerate for at least 4 hours, or overnight
·
Makes 2 cups of dip
Notes: Your Produce Man says the best way to clean Spinach is to fill your
sink with cold water and let the Spinach leaves soak. Lift out the leaves,
drain and clean sink. Repeat process a few times to insure getting all of
the sand or silt from the leaves.

Golden Spinach
Ingredients
2 ea Golden Delicious Apples
(peel, core, ½”cubed)
1 ½ lb Cleaned Spinach
1 cup Slivered Almonds
3 ea Shallots (chopped)
½ cup Raisins
½ cup Dried Cranberries
6 TBS Olive Oil
Instructions
- Heat 3 TBS of Olive Oil in large sauté pan over medium/high heat
- Sauté apples until golden brown on the edges.
- Add the Almonds and toast about 3 minutes.
- Add remaining Olive Oil. Add Shallots, Raisins, Cranberries. Stir to mix.
- Add the Spinach. Cover and cook until wilted, stirring occasionally. Cook about 3 minutes.
- Season with salt and pepper to taste and transfer to serving bowl.
