Tomato-Cranberry Salsa

- 2 cups (8 oz) fresh cranberries
- 1/2 cup (2 oz) coarsely chopped red onion
- 4 tomatoes, coarsely chopped
- 1 fresh jalapeño chili pepper, stemmed
- 2 tblsp fresh lemon juice
- Salt
Put the cranberries and onion in a food processor fitted with the metal blade. Chop with off-on pulses. Add the tomatoes and jalapeño pepper and purée. Transfer to a glass or ceramic bowl.
Stir in the lemon juice and salt to taste. Allow the flavors to ripen for 1 hour before serving.
Makes about 3 cups.
