Your Produce Man couldn't have been more thrilled to see the Pineapple industry thriving in Hawaii, at least at the farmer's markets, where you can find most of the yellow-fleshed low-acid Pineapple types.  The tops were fresh and green.  The eyes of the Pineapple were full and plump, with yellowing around the eyes.  You pick these babies up, and you know you have something.  They feel as heavy as a bowling ball.  Final test from Your Produce Man, smell the cut end of the Pineapple.  That's the end opposite the crown of leaves.  I lift it up to my nose and there it is.  The intoxicating smell of the tropical paradise of Hawaii.  You can't miss it when it's there.  So I get this Pineapple back to the hotel.  Leave it on the counter top covered for just two days.  During these two days, even more acid is dissipating from the Pineapple.  On our final morning for Breakfast, Your Produce Man and his Valentine enjoyed spears of some of the sweetest, melt-in-your-mouth like cotton candy sweet Pineapple.  They were perfect.  Fortunately, we don't have to wait for super sweet Pienapple in the stores.  Ask the produce manager how fresh they are.  Know how to pick them and store them when you get them home.  If you do, you will think you are in Hawaii...even though Hawaii doesn't grow nearly what they used to.  Most of our Pineapples now come from other tropical regions like Costa Rica, Ecuador and Mexico.  Even today, I bite into a great Pineapple, I say, "Aloha!" and enjoy.
